This stew (or soup as it should be called) is one of our favourites, it's simple, quick and delicious. We originally found the recipe in Metro, and then modified it to suit our tastes.
You will need this for 4 servings
- 2 courgettes
- 1 large fennel
- 1 red pepper
- 20 sun-dried tomatoes
- 3 tomatoes
- 2 tbsp vegetable stock
- 1 tsp sambal oelek
- 80 g salami
- 100 g black kalamata olives
- 250 g halloumi
- olive oil
- possible basil for garnish
Do the following
Slice and roughly dice the courgettes, fennel, peppers, tomato and salami. Heat the olive oil in a thick-bottomed pan. Fry the courgettes, fennel and peppers. Add 1.5 litres of water, the vegetable stock, tomato, salami, sambal oelek and olive. Leave to simmer for about 10 minutes. Slice and add the halloumi. Garnish with basil if desired. Serve with bread. This is a really good stew or soup!

Great to try now that we're on a little mini-vacation.
A whole week we will be out and about, it is so cosy even though it is cold outside. Have a planned stop, at our motorhome dealer on Monday, but otherwise we travel around as we usually do what the nose points.

Ferferi, yes the halloumi melts together a bit and becomes more like small shapeless balls, but it is really good in the stew!
