Mussels au gratin

This weekend we cooked mussels in the motorhome. Mussels can be really tasty, especially when gratinated in the oven, so we wanted to share the recipe. Luxurious and delicious as an appetiser or snack with a glass of champagne or white wine. Even people who think they don't like mussels tend to like them!

What is needed

  • Fresh mussels (one net)
  • Butter (at least 100 g)
  • Dark bread (1-2 slices)
  • Fresh parsley (half a pot)
  • Garlic (two cloves)
  • White wine (a splash)
  • A lemon

Do the following

Melt the butter in a pan and mix with the crumbled bread, chopped parsley and finely chopped garlic. Place the mixture in the fridge. Brush the mussels clean, and discard any that don't close when you tap the shell. Cook them for five minutes in water and a splash of white wine. Discard any mussels that have not opened.

Loosen all the mussels and place them on one half of the shell on a baking tray. Place a small dollop of the mixture on each mussel and bake in the oven for about 10 minutes. Serve with lemon wedges. (Our version of a recipe in the The big fish and shellfish book)
