Elk roast and juniper sauce today! After we cooked our luxurious dinner with deer fillet, we have become a bit obsessed with game. We haven't eaten much game before, so it's fun to try it. Today we had roast elk with potato gratin and juniper sauce.
This is how we cooked the elk roast
We cooked the elk roast in the oven until the thermometer showed 70 degrees. We made the juniper sauce by frying chopped onions and crushed juniper berries together with a splash of gin, and then pouring on game stock, cream and a touch of cornflour. Very good, even though it was not as tender and fine as the deer. This weekend it's time to try wild boar ... It will be exciting! Do you usually cook and eat game?

Game is delicious. I would probably have kept the meat in the oven much longer or made it into a dumpling. We often had elk and deer meat in the past. It usually depends on how long the elk has been hanging, because the longer it hangs, the more tender the meat. Mushrooms are good as well as mint jelly.

We eat quite a lot of elk because there is an elk hunter in the family. The simplest and best way to eat moose is with a potato gratin and gorgonzola sauce, but we also make stews, soups and minced meat dishes.
Tjälknöl is prepared by putting the frozen meat in the oven, about 75-100 degrees for about 12 hours, mix a layer of 5 dl of water, 1.5 dl of salt 1 teaspoon of sugar in a plastic bag and put the warm meat in it, let it stand for 5 hours, turning the bag a few times in the meantime. Then just cut thin slices and enjoy. The meat will be tender even if it was not of good quality to begin with.

Yes, my Swedish family eats reindeer meat every week. Elk meat, hare and grouse are also cooked. To my taste, game food needs a little more powerful wines. Ugh, you make me hungry with your picture! Yummy, I'm sure it was delicious!

The motorhome, understand that there are a lot of moose when you have hunters in the family! It will be a different matter then. Tjälknöl seems good, but you have to be at home 12 hours at a time then ...

Katarina, I understand that you ate a lot of game in the north! I guess it is so natural. I myself come from Skåne, so reindeer feels a bit exotic.

We don't eat moose as often, but we eat deer quite often. Good and tender, but like all other meat I think it should not be fried too much. Yours looked perfect! I hate dry meat! It spoils the whole feeling!

We eat elk / deer / fallow deer / wild boar 3-4 times a week. There will be roasts, stews, minced meat dishes, wook etc. We love Asian food in our family, so we eat it both now and then.
We got a motorhome last summer - the Bürstner 626 elegance - and it's the best thing we've done in a long time. Now we are waiting for spring, so we can get out and roll again. There is so much we want to discover... Agneta
