Barbecue evening with grilled chicken thigh fillet.

Last night it was grilled chicken thigh fillet with split potatoes and feta cheese scrambled here at Kapellskär's campsite. the evening was cold, so it was to grill outside and then have it cosy inside the motorhome. Grilled chicken thigh fillet

Chicken thigh fillets may seem a little more fussy than regular chicken breast fillets, but the meat is both more tender and a little fatter. So it's extra tasty! We removed the largest pieces of fat and marinated in a ready-made red wine marinade from a bag. Then it was just to grill! We are just as traditional as many others when it comes to this, so Peter grilled while I fixed other accessories in the kitchen ...

Great feta cheese spread

The feta cheese mixture we usually make is very simple and delicious! We take a packet of feta cheese (any brand and fat content) and mix it with a box of crème fraiche (any brand and fat content works here too). Then we mix in plenty of fresh or dried herbs, such as thyme and basil, and season with a little salt and pepper. It's great with chicken, but also with lamb and vegetarian dishes.

We chose to serve the chicken and feta cheese mixture together with jacket potatoes that we cooked in our oven and grilled peppers, which we could grill after the chicken. We also made a simple tomato salad with halved cherry tomatoes, chopped red onion and a little olive oil. Super tasty!

Then we had a cosy evening in the motorhome here at Kapellskär campsite, outside Norrtälje. Today it's raining, so maybe it's time to pick up a book and read a bit while listening to the rain?
