This weekend we're going on a motorhome trip and we're going to take the opportunity to feast on seafood. Among other things, there will be crayfish in their own layer. We have bought frozen, slightly cheaper, crayfish and then cooked a layer that the crayfish are now in. It will be interesting to see how this tastes, but we can at least say that it smells very good!
Crayfish in their own team - here's what we did
We bought a regular cheap packet of crayfish. We took the crayfish out of the original stock and rinsed them. Then we boiled all the ingredients in the new stock and let it cool. Once it had cooled, we simply poured it over the crayfish. Now they can stay in the brine until the weekend. Then we will see how it tastes.
Ingredients
Here are the ingredients for the stock. Simply mix everything together in a large bowl. Easy as pie!
- 2-3 litres of water
- 2 Porter beers
- 1 dl salt
- some sugar
- 2 bunches of chervil

I have tried this variant; boiling new stock. But I have never managed to make the crayfish tastier with it. I'm sure it's due to my shortcomings in the cookery industry, because I hear that other people do it well.
