Stuffed mini peppers make a nice little starter or a snack with a drink. We came across these sickly sweet mini peppers on Friday. Here's what we did with them.
Recipe for stuffed mini peppers
Today, I improvised and made a small starter using leftover cheese that we had in the fridge. The result was a pepper stuffed with feta cheese and chopped olives, a pepper stuffed with cambozola and a pepper stuffed with chèvre. I gratinated the peppers in the oven at 225 degrees for about 12 minutes. They all turned out really good! And aren't they cute, these little mini peppers?

Ulla Widing, it was simple too! You may need to cut off the very tip if you want the peppers to be able to stand up.
