Rack of lamb with parsnip mash

Tonight we tried cooking lamb racks in the oven, which we served with parsnip mash. It was really good! Here is the recipe for how we did it, for the two of us.

Rack of lamb

We marinated the lamb shanks in red wine marinade and fried them quickly, to get a little bit of cooking surface. Then we seasoned with rosemary and cooked in the oven, at 175 degrees, until the thermometer showed 55 degrees.

Parsnip mash

We boiled three potatoes and two parsnips. Then we pressed with a potato press and mixed with some butter and salt.
