Summer is the time for grilling. And what could be easier than getting out some cold sauces and rubs? Here are three favourites that are often made in our house. What are your favourite barbecue sauces/mixes?
1. Feta cheese scramble - goes well with chicken
- This is needed: A piece of feta cheese, a box of light crème fraiche, fresh or dried herbs (such as basil and thyme) and a little salt and pepper.
- Do this: Mash the feta cheese with a fork and mix together with all the ingredients. Flavour it!
2. Honey and garlic sauce - goes well with meat
- This is needed: A box of cooking yoghurt or a jar of crème fraiche, a dollop of mayonnaise, a heaping tablespoon of honey, 2-3 cloves of garlic and a little salt and pepper.
- Do this: Mix all the ingredients and squeeze the garlic. Season to taste with salt and pepper
3. Herb and citrus sauce - goes well with fish
- This is needed: A tin of cooking yoghurt, a little olive oil, a lime or lemon, fresh or dried thyme, a tablespoon of honey, a little cayenne pepper and some salt and pepper.
- Do this: Grate the zest of the lemon/lime and squeeze out the juice. Mix with the other ingredients. Season to taste with salt and pepper.
Krister in Beijing says:
It is with no small amount of pride that I can confess that, despite my past as a restaurateur, it was strangely only this week that I cracked the code to the secret of béarnaise sauce.
No - I will never reveal it to anyone outside the family. 😉

Ninni, Henrik and the Hjulius motorhome says:
I like to mash a soft avocado, salt a little, pepper, and then squeeze in a reasonable amount (depending on your taste) of garlic! The more the better. Add some lemon as well so it doesn't turn brown and ugly so quickly.

Ditte says:
Good choice, I think, and I will try both the honey and herb/garlic sauce. Otherwise, we like the nobility, which is mashed in sour cream and pepper as a spice. Avocado is also useful; mashed and add some chopped chilli, chopped tomatoes, squeezed lime, chopped garlic, salt and pepper. Among the ready-made sauces, bee likes Lomanders. But feels a bit greasy...

The banana curry sauce/stir-fry is absolutely outstanding with grilled food. Mash a banana. Mix in some creme fraise or sour cream. Flavour with curry to the right strength. Tasty meal ðŸ™'

Aivar is also not bad for grilled food, and very easy to make. Just open the jar and serve : ) /Linda

Well, we're probably not so much for messes really. But Hoummous (bought in Hötorgshallen) and Guacamole are our favourites. By the way, I forgot to say that we don't grill... on the balcony;-)

Krister, ah, I was hoping to know now...
😉
Ninni, great tips! Love avocado, don't know why I don't usually make avocado scramble, will probably do it one day!
Ditte, noble fashion... er, noble cheese? I will definitely make a mess of avocado one day! Lomanders I haven't tried...
Criss-cross, oh, that was a slightly different sauce/scrambler! Interesting!
Mary of Rövarhamn, ajvar is delicious and just opening a jar is perfect sometimes!
🙂
BP, we also usually buy hummus ready-made (we don't get it as good ourselves when we try... haha) and we have actually also bought it in the hötorg hall several times!

Thanks for the tips! Here it has so far been so rushed, mostly just finished potato salad in the plastic jar and some Bratwurst to it and then a mustard stub.
But there is a need to tighten up, and the organisation and serving of food is certainly important.

Thanks for the tips, they all seem good. There are also so many good ready-made sauces that we use when we want to keep it simple. Erik Lallerstedts bernais sauce with chilli, for example, is super good. Quite strong too. For fish, we often mix a crème fraîche with lots of dill, strong mustard, a little sugar, salt and pepper. Goes very well with both grilled and smoked salmon. Try it. Enjoy! 3 M

3M, we have tried Erik Lallerstedt's sauces, they are good. That fish sauce sounds good too! I will probably try it!
