Mussels with tomato and parsley

We love good food, especially fish and seafood. For a week we've been camping with kids who only want meat and chips, and maybe the occasional barbecue sausage. Already yesterday we had crazy cravings for seafood. But how easy is it to find fresh fish and shellfish on a Monday?

Importation of shellfish

So we made a raid today. At Coop we found salmon pâté and mussels and at Hemköp we found prawns. The shrimps were unfortunately old (we will return them tomorrow) but the mussels tasted wonderful! Here is our new recipe (a combination of a recipe on Tasteline and memories from Canada):

You will need

A net of mussels, an onion, a clove of garlic, 4 dl of white wine, 2 dl of cooking cream, a few tomatoes and some parsley.

Do the following

Rinse the mussels and discard those that do not close. Finely chop the onion and garlic and fry in butter in a pan. Add the wine and the mussels. Cook on high heat under a lid for about 2 minutes, until the mussels have opened. Remove the mussels and place them in a deep plate. Pour the cream and chopped tomatoes into the saucepan. Bring to the boil and pour the liquid into the plates. Sprinkle with parsley.
