Right now we are hanging out in the motorhome and having a good time. We've been doing two training sessions a day for a few days, so today was a rest! It's raining outside, so we have spent time cleaning, even more travel planning and reading. And of course, you have to cook good food!
Prawns and cauliflower with sambal oelek
Here is a picture from yesterday's cooking ... Our new favourite dish consists of shrimp and cauliflower in sambal oelek and garlic. The dish originated when we had too little shrimp and had to supplement with something we had at home. It turned out so good that now we always have equal parts of shrimp and cauliflower!
We finely chop a whole garlic and fry it in olive oil. Then we throw in prawns, cauliflower and three teaspoons of sambal oelek. We serve with rice, some garlic dressing and a good white wine. Mmm! Has there been any good food at your house this weekend?

The best dishes are always created by adding something you have at home, or forgetting about the food (thinking of chard here).
I think your selfie is so much fun, you enjoy and have fun, it shows.
I also like your new hairstyle, it's really cool and suits you perfectly! Keep it even in Sweden - it's actually in right now - the hairstyle that is:-)
Well, we've just had pork fillet Iberico (thanks to the local ICA store!) It doesn't even compare to the dry Swedish version. Yummy! Yesterday it was Picanha - yummy as well:-) And on Friday Seabream - so, no, we haven't been in need of anything this weekend either.

Sandora, we haven't exercised for a while so we are trying to get started!
😉
Rolle and Carina, cabbage pudding sounds good! I can't cook such food myself, but I have ordered it for lunch sometimes at the Kvarnen restaurant in Sthlm. They are good at home cooking!
🙂
Camilla, pulled pork is delicious! I haven't eaten it many times actually, but on a few occasions.
BP, haha it can be like that! There are probably a lot of dishes that have an interesting history that way! Interesting that you found Iberico pork fillet in Sweden, I did not know it existed! Understand that it tastes much better! How much more expensive? And picanha... I don't know what that is? In any case, it does not sound like you are in any trouble!

Mr Lars Permelin says:
It looks like you enjoy motorhome life and have fun together. Good food is usually the simple thing with fresh ingredients and I think you can easily get it down there in the heat. Wishing you a continued nice trip.

On Saturday we had salmon topped with a mixture of creme fraiché, parmesan cheese, French mustard, prawns and dill. Not bad at all...

Shrimp and Cauliflower is delicious, I agree!
We eat it often, fits well into the 5:2 diet!
Luckily, we have long been fond of Cauliflower!
Sometimes we have prawns, sometimes lean ham!
Live well!

Lars Permelin, we certainly enjoy motorhome life! And I can only agree, food does not have to be complicated with good ingredients!
Znogge, Mmm, sounds super tasty!
Deciree, given that we're on holiday for a whole year, it's good not to get too bogged down...
😉
Lars and Inger, there will certainly be many times during the trip that we will not be able to train at all. So now that we have the time and opportunity, we take the opportunity!
🙂
Lennart, cauliflower is a favourite vegetable here too! We think a bit about what we eat and prefer to choose healthy ingredients, but it's not a diet, then we wouldn't be able to exercise.

Isn't it wonderful with those simple and so tasty dishes! You can continue to build on your version with what's in the fridge and vary it endlessly - at least for quite some time!

Ditte says:
It sounds so good and prawns are always "right" and fun with variation. We have been to a party and eaten a lovely västerbotten pie and a "gubbröra" also with origins in the northern regions. Also a lot of other things on the buffet table like olives, bruschetta with tomato & avocado, salads etc.
I hope the sun is back soon. But you are doing well anyway.
Well done with all the training.

Lena says:
Wow how brown you have become, on the other hand difficult not to get brown in those latitudes ?? Saturday's dish was browned salmon in (home-made lemon oil, lots of spinach leaves and green asparagus with cream of tartar on top of good boiled potatoes and limoncello and beer ??

Mr Steve says:
It's great to see such joy in the motorhome kitchen. Delicious meals can be created when you just take what you have.
Yesterday we had the first greenhouse meal of the year. It was a pasta dish that D put together from what was available, pasta, blue cheese and broccoli. On Saturday, D offered paella.

Marina, of course you can vary! Only your imagination is the limit
😉
Ditte, it sounds fantastic with a buffet and some Swedish flavours like gubbröra and västerbotten pie! Yummy!
🙂
Lena, even though we have rain today, we have had a lot of sun! That salmon dish sounded tasty!
🙂
Steve, how wonderful that you finally got your first greenhouse meal! Both paella and pasta with blue cheese sound delicious!

Anna in Dubai says:
It looks so cosy when you're hanging out in your campervan.
The weekend has become 50 shades of hummus. I have guests and I think they should overdose on Arabic food. Anyone who comes here and cooks pasta gets a beating...

Ama de casa says:
It's fun when "mistakes" lead to new, even better dishes.
🙂
Here it has mostly been tapas this weekend, for some strange reason ...

Sounds delicious! Thanks for the tips! Here it will probably be chicken and pasta today so the children will be happy. I myself would rather eat shrimp and cauliflower! Another time!

Anna in Dubai, hehe, of course you have to take the custom where you come. Love hummus by the way!
😉
Ama de casa, that's funny, I don't really understand why...
😉
Åsa, that's how it used to be when we had children at home. Now we can eat what we want
