Has anyone noticed that Peter is interested in cooking? A reader wrote on Facebook that we should rename our blog to FREEDOMfood. Haha, why not? Or at least temporarily... Travelling is our biggest interest, but now that we're travelling less, Peter is living out his cooking interest. Today we present the best recipes of the week and this weekend we're going on a "weekend trip".

Best recipe of the week
Last Saturday we had a great dinner at home with six (!) courses. If you are wondering how it went, it went well. The evening did start with a bit of panic because there was a blockage in the drain along the bridge, so you couldn't wash your hands, go to the toilet or run a dishwasher - not so good when you're serving a festive dinner to six dinner guests. But it worked out (said one who was necessary), and the dinner was a success!

Open oysters
Course number two on our menu was oysters. oyster do not need to be repaired in any way, but you have to open them. Peter tells you how to do it in the video! Then just serve with a little lime or lemon and maybe tabasco or sambal oelek.
Crayfish soup
The third dish on our menu was a crayfish soup made with crayfish cheese. This soup is really simple and here Peter shows how to make it in a video.
Gratuity with lobster and scallops
The first main course was a gamble, I guess you could say. When we were in Canada in 2012, we got an incredibly good seafood casserole filled with salmon, haddock, lobster, scampi and scallops. Inspired by this occasion, Peter whipped up a gratin!
Rack of lamb with basil cream
The second main course consisted of rack of lamb, root vegetables and basil cream. Peter is really good at making good rack of lamb, so watch the film! And the basil cream? Well, it's to die for... Not only for lamb, but also for chicken, fish, vegetarian dishes, pies or almost anything.
This weekend's "weekend trip"
So where should we go this weekend? Prague? Budapest? Paris? Nix pix, this weekend we are off to Västerås where we have some business. We will of course report back! What has been the best part of your week? What are your plans for the weekend?

Fun with food posts on Youtube! I will probably try a variation on the fish gratin (haddock is an underrated fish, firm texture, tasty and often at a good price). Then I will make basil cream already tomorrow.
My weekend will be extra long as I will go to the spa in Varberg Sunday - Monday with three childhood friends, just so fun and nice!

Smart to make the crayfish soup with the crayfish cheese. I made crayfish soup with crayfish shells, but it was totally inedible. I usually make shrimp soup with shrimp cheese, and it's good.

What great tips. The owner has so far only seen his favourite video with the rack of lamb. They have done the same at some point but with different spices and a grill plate. The owners think the grill patterns are "nice" when served.
The basil cream sounds very exciting and the owners should try it.
Otherwise, the owners have cleaned and fixed me all week as tomorrow I will go into my winter storage. Today, the male owner also has a holiday so all that last thing is also ready.
On Sunday he goes to Tenerife to enjoy some sun and swimming so it has been washed and today he will also pack the suitcase.

The best thing about the past week is that we have increasingly landed in our new future plans. We have created a really good broker contact and set a timetable for upcoming property transactions.

Most liked the fish gratin with the scallops and lobster. We often eat lamb racks, although we only buy racks from New Zealand;-)

Most recipes don't appeal to me - I don't like oysters or lobster,
have no idea what shrimp cheese is; rack of lamb (too much bone);
vegetable spit, OK. If I had been a guest, I would of course have tasted...
on everything (except oysters) and probably enjoyed it. I consider myself to be
reasonably good at cooking, but I'm a lazy cook.
Fun this weekend? Working at "my" flea market this morning, Saturday.
Always fun, because you never know which customers will come in.
