Today is Friday and I (Helena) am at a conference all day and will be late home. But until we take the weekend for real, we can think back to last weekend's festive dinner. On Sunday we had a 3-course menu with seafood here in the houseboat.
If you follow our blog, you may have noticed that Peter is in a "cooking flow" right now. He's trying out all sorts of new ingredients and dishes, especially when it comes to seafood.

Cleaning the freezer
You won't believe it, but this menu was composed by Peter (using various recipes from the internet) after he started cleaning out his freezer. What do you have in the back of the freezer? We had a small bucket of scallops ...
We bought them when we had guests some time ago, and now there were many left. Therefore, we had a 3-course menu with seafood, where scallops were included both in one of the starters and in the main course. Dessert is not so much of our thing so we skipped it ...
Starter 1: Sardines on bruschetta
As a first starter, we got a buttered small slice of bread with super tasty "toppings". Peter scalded tomatoes and fried them together with garlic and parsley. Then he gratinated sardines with the "filling" on top and some grated cheese in the oven. And finally, he put everything on the buttered bread slices.
Starter 2: Scallops in pea puree
The second starter is my absolute favourite in this whole menu. Soooo good! If you want, you can make a little less pea puree and serve it on a flat plate instead. To make the purée, boil the peas and mix them with crème fraiche. You can see the whole recipe in the video!
Main course: Seafood gratin
The main course was a gratin with scallops, prawns and crayfish tails together with a lobster-flavoured sauce. This was served with oven-baked mashed potatoes and boiled broccoli.

I like Peter's flow cocking... So hila nice and inspiring. I may miss the availability of fresh seafood where I live.

I'm sure there are other goodies in your area, but I would really miss fresh seafood if it wasn't available ....

Worst restaurant food.
Would you like to show the recipes, if there are any?
Have a feeling that Peter is freelancing freely ?

How good you are, Peter, at documenting cooking in a nice way!
Happy Friday to you 😀
I'm trying to make my rainy Friday as happy as possible, even though it might hurt a bit (the dentist and the flu vaccine) 😀 but, what?
I am so happy with the experiences I have had lately, just say Madeira!!! Hugs!
10 November 2017 - 8:04
Helena says:
Glad you like Peter's films! I tell him that! 🙂 And it sounds like you had a wonderful time in Madeira!!!

How delicious! Peter must be entering a cookery competition soon.
The best thing this week is that we had Liv visiting us. Tonight Erik and Alice are coming with mum Mia and dad Marcus. They have pizza with them so we will first have dinner together and then watch the Sweden-Italy match. What a lovely Friday and start to the weekend!

Tasty! And we also think it's important to eat "good" food and we like to do it both on weekdays and weekends. Fun with Peter's kitchen creativity! And creating tasty dishes with what you have at home is perfect.
Seafood in all forms is favoured here and can be varied endlessly. I also eat a lot of Asian food where I experiment with ingredients and flavours. It's fun to botanise in the Asian shops.
It's been a good week in every way and meeting "my people" in Uppsala, fun job planning, the travel fair and lunches with friends have been extra energising.
10 November 2017 - 10:28
Helena says:
Eating well makes life better! We also like Asian food, but our own Asian cooking is probably a bit more "basic" (and maybe not really Asian either ...).

What great food films and pictures!
My happy Friday will be gilded with dinner here at home with three of my former night work colleagues. This autumn it was 20 years since my last work shift with them at the Emergency Chemistry Lab, but we still have just as much fun when we meet once every autumn. Here are already the bubbles on cooling!!!
10 November 2017 - 10:52
Helena says:
But what fun that you keep in touch and still meet in that way! Nice weekend!!!

Would love a bruchetta - sounds incredibly good. Love sardines!
The gratin sounds wonderful; unfortunately, I have realised that I am
allergic to scallops, which are so good!
-Not a great week but it gets better. Always uplifting
to read this blog and, first of all, to see Peter's smiling face.
Life lover extraordinaire !!!

I got hungry for the seafood gratin, good tip as we have access to an oven here in the apartment on Grand Canaria. Just need to find a fish market / shop, otherwise it will be Lidl which has most of the choice in the freezer boxes.
Here's how we're saying cheer for Sweden tonight
10 November 2017 - 11:42
Helena says:
Sounds so wonderful with Gran Canaria! 🙂 Embarrassingly enough, I have to admit that I do not know which sport or competition we are competing in (can be blamed on hysterically much to do in recent days) but say cheer Sweden anyway! 🙂

Yummie, yummie! I think Peter should start with a TV show. He is a natural talent, both as a chef and presenter:-)
All dishes are great - I also love sardines and scallops:-) The pea puree, however, reminds me too much of English "mushy peas" served with fish 'n chips;-)
I am looking forward to Sweden-Italy tonight:-)

Helena says:
Peter has a great show with all his films, haha. And I say go Sweden! (See my answer to Husbilen Helge above...)

Oh, it looks really good!!! Will probably try it sometime, I love seafood ... and so good with the films!
I've just come home after a Friday night out at a French restaurant, I've also eaten very well! It is our Friday routine, to eat out every instead of cooking at home. . Usually just me and my husband, but sometimes we have company. Like today, when the youngest son (whose girlfriend is in Stockholm for the weekend) came along. Nice! It's Happy Friday for us, outdoor food and some good wine! Have a nice weekend!
