Desserts for New Year! Have you started planning your New Year's menu, but are still a little unsure of how to end the dinner? We've been cooking luxurious three-course dinners throughout the festive season and have had time to try three delicious and simple desserts.

Desserts for New Year - three suggestions
Desserts are not really our favourite thing, but of course we like something sweet to end a good dinner. For us, however, desserts should be easy to put together. Here are three tips for simple and tasty desserts for New Year, with everything from blueberries to rhubarb. Of course, we are also curious about your best dessert tips! We ourselves will probably make a repeat of the pannacotta - always good!
1. Blueberry cheesecake in a bowl
We love cheesecake and making a simple "cheat version" in small bowls suited us perfectly. Very simple and very tasty! If you want, you can serve the dessert in glasses instead.
You need (2 servings)
- 3 digestive biscuits
- Fresh blueberries
- 100 g natural cream cheese
- 1 dl whipped cream
- Half a cup of caster sugar
- One teaspoon of vanilla sugar
- Possibly a lemon
Do the following
- Whisk together the cream cheese, cream, sugar and vanilla sugar into a fluffy cream. If you wish, you can grate some lemon zest and mix it gently into the cream.
- Crumble the digestive biscuits.
- Arrange the cream cheese, digestive biscuits and blueberries in a small dessert bowl or glass.
Serve as follows
Ready to serve! Coffee and perhaps a small whiskey or brandy can be served with it.
2. Rhubarb compote with ice cream and cream
Another favourite in the dessert world for us is rhubarb. This dessert is based on a similar concept to the previous one, mixing different flavours in a small bowl or glass. Simple and delicious!
You need (2 servings)
- 3 digestive biscuits
- 2 rhubarb sticks
- A little butter or margarine for frying
- Half a cup of caster sugar
- 1 dl whipped cream
- Some vanilla ice cream
- Strawberries and/or raspberries
- Possibly a few sprigs of lemon balm
Do the following
- Cut the rhubarb into centimetre-sized pieces.
- Fry the rhubarb in butter and sugar for about five minutes. Then leave it to cool.
- Crumble the digestive biscuits and arrange the biscuits, rhubarb, cream and ice cream in small dessert bowls or glasses.
- Top with a few raspberries and/or some sliced strawberries.
- Decorate with a few sprigs of lemon balm, if desired.
Serve as follows
Ready to serve! Coffee and perhaps a small whiskey or brandy can be served with it.
3. Pannacotta with cloudberry jam
Pannacotta is a dessert that we keep coming back to. In the past we have usually served it with raspberries and blueberries on top. This time we varied and topped it with cloudberry jam. Recommended!
You need (2 servings)
- 2.5 dl of cream
- 1/4 dl sugar
- Half a vanilla pod
- 1 gelatine leaf
- 1 tbsp Cointreau
- Cloudberry jam (or fresh cloudberries)
- Possibly a few sprigs of lemon balm
Do the following
- Place the gelatine leaf in cold water in a bowl.
- Cut the vanilla pod in half lengthwise so you can scrape out the seeds. Scrape the vanilla seeds into a saucepan and add the pod as well.
- Pour the cream, sugar and Cointreau into the saucepan. Bring to the boil, stirring occasionally. Then switch off the heat.
- Squeeze out the gelatine leaves and add to the saucepan. Stir until the gelatine dissolves in the hot cream.
- Pour the mixture into two small dessert bowls or two glasses.
- Place the pannacotta in the fridge and let it set for at least three hours. It can also be left overnight if you want to make it the day before.
- Top with the cloudberry jam (or the fresh cloudberries if you have them). If you wish, you can garnish with some lemon balm.
Serve as follows
Ready to serve! You may wish to add coffee and perhaps a small brandy or cointreau.

When talking about good restaurants, I usually say: As long as they have good desserts and can make tasty cocktails, it's a good restaurant for me :-).

At the owners' home, there will be three layers of chocolate mousse in different colours. Otherwise, the owners agree with you, pannacotta is not bad. A few weekends ago they had mint pannacotta because during the pandemic they have more festive food every Saturday to surprise each other. One cooks and the other doesn't really know what is being served and everything starts with a drink. They have to do something festive as they can't see anyone else.
