Shrimp soup on shrimp shells! We love shrimps and now that we are trying to eat healthily, while enjoying good food, shrimps are more popular than ever. The other day we had a lot of shrimp shells left over, so we made sure to utilise them to make a delicious shrimp soup.

Prawn soup on prawn shells
We made a prawn soup with prawn shells, inspired by various recipes from the internet. It was soooo good! There is a lot of flavour when you use shrimp shells, and at the same time it feels good to use them instead of throwing them away. We ate this soup as a starter, and then had fish for the main course.
You will need
For two servings (we ate this as a starter) you will need:
- A carrot
- One yellow onion
- 1/3 fennel
- 600 grams of prawns
- 2 tbsp tomato paste
- Cajun pepper
- A dash of olive oil
- 1.5 dl of white wine
- 6 dl of water
- 3 dl cooking cream
- Salt and pepper
- A lemon
- Brandy
- Fish broth
- Pointed cabbage and dill
Do the following
- Peel the fresh prawns.
- Cut the carrot, fennel and onion into small pieces.
- In a large saucepan, fry the carrot pieces, chopped onion, tomato paste, one third of the fennel and the prawn shells in a little olive oil.
- Add the water, fish stock cube and white wine and cook for about 12 minutes. (Do not overcook, as the shrimp shells may give off a bitter flavour).
- Strain the prawn shells and vegetables.
- Pour in the cooking cream and simmer for five to 8 minutes.
- Now season with salt and pepper, lemon juice, cayenne pepper and some brandy if you have it at home. You should feel lemon, heat and strength in a lovely balance. Throw in lobster stock too if you. want multiple flavours from seafood.
- Serve in deep plates or small bowls. Add fresh prawns to the soup and decorate with them. You can also quick-fry the cabbage and mix it into the bottom of the soup with the prawns.

Mannerström has a nice prawn soup that I use as a basis for making prawn soup. Always save the shells. Have half the freezer full, by far the best thing to use when cooking fish that should be luxurious.
However, I usually roast the peels together with some lemon peel at maximum heat in the oven before pouring them into the pot with wine and water. I also add a little cognac as described by someone above. Then I use either garlic or fennel with yellow onion and carrot. These are the two basic variants I have and both give a fantastic background! A tip is also to use the shrimp soup as a base in a seafood stew/soup - that's the secret to the ultimate flavour experience. That and the aioli 😉 .

We also do the equivalent but on
Crayfish shells. Never use cooking cream though, the years in France have taught us to only use "real" ingredients. We also usually add a splash of port, sherry or brandy at the end and finish with a knob of butter with a little flour. It really is gourmet food!

When do the shrimp shells go in - is it in step 4?
We like to eat shrimp in paella or make shrimp sandwiches. I also like to make my own version of the New York favourite "lobster in sausage rolls" but with shrimp instead of lobster. Easy to make and super tasty!
